    The main shelf life determining post-processing parameter for chilled and frozen food products is temperature. Possible temperature fluctuations and even unexpected, out of specifications, temperature conditions throughout the Cold Chain should be considered when developing a Cold Chain management and quality/safety assurance system. This chapter describes the use of two different approaches for an effective Cold Chain management and optimization.

Within FRISBEE European project ( http://frisbee-project.eu ) a web-based platform was developed for temperature conditions data collection throughout the chilled and frozen food supply Chain. Data including all Cold Chain stages (industry, distributors, retailers and consumers), were collected. This extensive database comprising more than 14,000 time-Temperature (t–T) profiles can serve as a valuable Cold Chain Management tool. The user can define a sequence of Cold Chain stages for selected food products. The Cold Chain Predictor (CCP) software based on the Cold Chain Database (CCD) allows calculation of product shelf-life status at different Cold Chain stages based on existing or user defined kinetic data. Conducted field tests expanded the Cold Chain Database and validated the software. The developed tools offer the potential to run simulation scenarios based on real Cold Chain data and contribute to effective Cold Chain improvement and management.

    Storage and distribution are the weakest links in the food management. Their effective control is important for their commercial viability, since they often deviate from specifications. FRISBEE (http://frisbee - project.eu) is a Food Refrigeration Innovation for Cold Chain research IP European project. Within FRISBEE a web - based platform (hosted in the link http://www.frisbee - project.eu/ColdChaindb.html /) has been built for data collection, maximizing information retrieval with user friendliness. At all stages of the c old Chain, the needs of consumer and European industry were considered, gaining a greater insight into deviations between real Cold Chain data and targeted specifications. A systematic data collection for identification and evaluation of the weak links of the Cold Chain for different types of chilled and frozen products took place. Data from industry, Cold Chain parties (distributors, retailers) and consumer surveys, including all stages of the Cold Chain (from production to consumption) were collected. More than 5 5 00 actual t -T profiles have been contributed. Significant differences in t -T profiles of same products along the European Cold Chain were observed. A comprehensive and extensive database that serves as a valuable tool to Cold Chain Management was developed. In this database, the user can build a specific sequence of Cold Chain stages for specific food product. The FRISBEE Cold Chain Predictor (FRISBEE_CCP), software developed within FRISBEE objectives, allows the calculation of the remaining shelf - life of a specific food product at different stages of the Cold Chain corresponding to a specific t -T profile, if deterioration factor kinetic data are known. The developed FRISBEE Cold Chain web based platform offers the potential to effectively manage and improve Cold Chain weak links. The contributed data of the Cold Chain will allow one to run simulations and distribution scenarios based on real Cold Chain data.

    Any noticeable increase in ambient temperature resulting from climatic change will have a substantial effect on the current and developing food Cold-Chain. A rise in temperature will increase the risk of food poisoning and food spoilage unless the Cold-Chain is extended and improved. The little data that is available suggests that currently the Cold-Chain accounts for approximately 1% of CO2 production in the world, however this is likely to increase if global temperatures increase significantly. Using the most energy efficient refrigeration technologies it would be possible to substantially extend and improve the Cold-Chain without any increase in CO2, and possibly even a decrease.
