The chamber temperature and the water content of the dried film made of maltodextrin, gum arabic or sugar cane molasses, were determined at the instant of detachment from the solid surface and compared with an empirically determined glass transition temperature curve. The results indicated that the detachment mechanism was controlled by the glass transition of the material. The lower the glass transition temperature of the film, the drier the film should be for detachment to occur. Thus the glass transition phenomenon can be used as a reference for the optimization of drying processes of Paste-like material, as a guide for the design of dryers or in the formulation of Food Pastes.

Universitat Politècnica de Catalunya, 2021Co-Authors: López Lorenzo NúriaAbstract:El actual proyecto consiste en diseñar, construir y controlar el prototipo de la máquina de impresión 3D de alimentos llamada POW3D. Corresponde a una impresora planteada para extrudir pasta de alimentos con la finalidad de automatizar todos los procesos que, actualmente, se realizan con una manga Pastelera. POW3D cuenta con la ventaja de no disponer de una cama caliente de impresión pues se mantiene sobre cuatro ruedas y se desplaza, gracias a estas, en el eje Y. De esta manera, se imprime tanto alimento como longitud de mesa de impresión se disponga. Para la construcción del prototipo, por un lado, se han comprado los componentes seleccionados para el correcto funcionamiento y, por el otro, se han tenido que fabricar. Un ejemplo de ello son las planchas de metacrilato, que se han obtenido mediante el corte por laser, las cuales forman la estructura de la impresora. Por añadidura, el otro proceso de fabricación al que se ha recurrido para obtener alguno de los componentes es la propia impresión 3D de plásticos. Finalmente, una vez ensamblado y construido el prototipo se ha procedido a configurar el firmware que incorporará la máquina y se ha realizado el conexionado de los componentes eléctricos con tal de controlar los movimientos. El firmware que se ha configurado recibe el nombre de Marlin. A continuación, se ha compilado el archivo Marlin en el Arduino y se ha apilado en la placa madre de la impresora (placa RAMPS 1.4) con tal de instalar el microcontrolador.In this project, the main objective is to design, build and control the prototype of the POW3D, 3D Food printing machine. It is a printer designed to extrude Food Paste in order to automate the processes that are done with a pastry bag. POW3D has the advantage of not having a hot printing bed due to it is kept on four wheels and moves, thanks to these, on the Y axis. So that, Food can be printed as the length of the printing table is available. For the construction of the prototype, on the one hand, the components selected for correct operation have been purchased and, on the other, they have been manufactured. An example of this are methacrylate plates, which have been obtained by laser cutting, and form the structure of the printer. In addition, the other manufacturing process that has been used to obtain some of the components is the 3D printing of plastics itself. In closing, once the prototype has been built, the firmware that will be incorporated into the machine has been configured and the electrical components have been connected in order to control the movements. El presente proyecto, trata de aportar parte de una máquina innovadora al sector alimentario que sume en el desarrollo de la tecnología de impresión 3D en este ámbito Concretamente, se desarrolla el mecanismo extrusor que permitirá extrudir pasta alimenticia. Este mecanismo, se basa en el funcionamiento Spiralift o cilindro helicoidal, el cual es un mecanismo de elevación que consta de un fleje y un muelle que encajan y crean una estructura muy resistente a compresión que, al enrollarse, va creando un cilindro. Para el desarrollo del conjunto extrusor, se ha adaptado para simplificar el funcionamiento. En primer lugar, el émbolo el cual empuja el material alimenticio viene impulsado por el fleje mientras se enrolla y crea el cilindro. En este caso, el fleje está fabricado a partir de una lámina de polipropileno, cortado en láser con forma de Cola de Milano. Esta forma permite que, al enrollarse el fleje, se fijen entre sí los perfiles sin la necesidad de disponer de un muelle como el mecanismo Spiralift convencional incorpora. Una vez se ha creado el prototipo, se ha adaptado a la estructura de la máquina POW3D física y electrónicamente. Por un lado, se ha fijado a las varillas lisas del eje X de la máquina con un soporte impreso en 3D de plástico. Por otro lado, se ha conectado el motor, que transmite el giro al fleje, a la placa RAMPS 1.4. Finalmente, se ha iniciado el control del mecanismo mediante la configuración del firmware llamado Marlin que incorpora la placa.3D printing technology is increasingly present in different sectors, one in whi this technology is being developed is the Food sector.
