    The gill tissue is the main site of metabolic enzymes or compensation, with the kidney tissue playing a supporting role. At the gill tissue, carbonic anhydrase enzymes (CAs) catalyze the hydration of CO_2 to HCO_3^− and H^+ for production to the H_2O. In this work, the CA enzyme was purified from horse mackerel ( Trachurus Trachurus ) gill with a specific activity of 21,381.42 EU/mg, purification fold of 150.61, total activity of 2347.68 EU/mL, and a yield of 16.13% using sepharose 4B-L-tyrosine-sulfanilamide affinity gel chromatography. For recording the enzyme purity, gel electrophoresis was performed, and single band was seen. The molecular weight of this enzyme was found approximately 35 kDa. Also, the inhibitory effects of different pesticides such as thiram, clofentezine, propineb, deltamethrin, azoxystrobin, and thiophanate and heavy metal ions such as Fe^2+, Cu^2+, Co^2+, Pb^2+ Hg^2+, and As^3+ on horse mackerel gill tissue CA enzyme activities were investigated. Our results indicated that these pesticides and metal ions showed inhibitory effects at low nanomolar and millimolar concentrations for fish gill CA enzymes, respectively.

    Abstract In this paper, the total carbonic anhydrase (CA) enzyme was purified from horse mackerel (Trachurus Trachurus) muscle with a specific activity of 23,063.93 EU/mg, purification fold of 551.08, total activity of 1522.22 EU/mL and a yield of 18.50% using sulfanilamide affinity column chromatography. For obtaining the subunit molecular mass and enzyme purity, sodium dodecyl sulfate-polyacrylamide gel electrophoresis (SDS-PAGE) for this part was performed and a single band was clearly recorded. The molecular mass of this enzyme was found approximately 35 kDa. The optimum temperature and pH values were obtained from Arrhenius plot. In addition, the inhibitory effects of different heavy metal ions (Fe2+, Cu2+, Co2+, Pb2+ Hg2+ and As3+) and some pesticides (thiram, clofentezine, propineb, deltamethrin, azoxystrobin and thiophanate) on horse mackerel (Trachurus Trachurus) muscle tissue CA enzyme activities were investigated by utilizing esterase assay activity. The used metal ions and pesticides had IC50 values in the range of 0.21–13.84 mM and 3.78–70.58 mM, respectively.

    The assessment of enzymatic activity on Atlantic horse mackerel (Trachurus Trachurus) during frozen storage was carried out in samples pre-treated by high-pressure processing (HPP) combinations of 150, 300 and 450 MPa with 0-, 2.5- and 5-min holding time (untreated samples were used as controls). The activities of four enzymes (acid phosphatase, cathepsins B and D, and lipase) in fish muscle were quantified during accelerated storage conditions (up to 3 months at −10 °C). The experimental data were fitted to second-order polynomial models to determine the effect of pressure level, holding time and frozen storage time on these enzyme activities and to identify conditions of maximum/minimal enzyme inactivation. Acid phosphatase and cathepsin (B and D) activities were significantly (p < 0.05) influenced by HPP, showing behaviours during frozen storage different from control samples. Acid phosphatase and cathepsin B activities decreased (p < 0.05) with HPP treatments, being this effect more intense for cathepsin B, particularly at 450 MPa. Regarding cathepsin D, the activity increased (p < 0.05) at intermediate pressure (300 MPa) and decreased (p < 0.05) at higher pressure (450 MPa). During frozen storage, cathepsin D enzymatic activity tended to increase over time indicating activity recovery of these enzymes. Although a predictive model for its activity was not acceptable, the increase in lipase activity during storage was the most pronounced trend observed.

    Abstract Frozen storage of horse mackerel ( Trachurus Trachurus ) is limited by lipid damage causing sensory quality losses. This work deals with changes in functional and sensory properties during frozen storage of horse mackerel treated by high hydrostatic pressure processing (HPP) prior to freezing. Three levels of pressure (150, 300, and 450 MPa), pressure holding time (0.0, 2.5, and 5.0 min), and frozen storage time (0, 1, and 3 months) were studied. Expressible water, colour parameters, mechanical texture parameters and sensory parameters were evaluated in raw and cooked samples. The texture profile analysis of raw and cooked HPP samples suggested that a product texture similar or close to fresh muscle is possible. The sensory analysis showed that a 150 MPa treatment yielded high acceptability values. Although acceptability decreased during frozen storage, values remained close to those of fresh samples. Industrial relevance Frozen storage of fatty fish species is known to be strongly limited by the lipid damage development, being this an important drawback for its commercialisation as such or for its further employment as raw material in other kinds of processing (canneries, smoking, etc.). Present research provides novel and valuable information concerning the employment of high hydrostatic pressure technology applied before freezing and frozen storage to improve some functional and sensory properties in horse mackerel muscle indicating that it can be a useful alternative for fish processors seeking to better utilise this resource.

    We investigated the effect of a commercial plant extract, Rosmol-P (RP) on the stability of fish during frozen storage. Horse mackerel (Trachurus Trachurus) fillets were soaked in water (water control) and 2 RP concentrations (RP-1 = 0.333%; RP-2 = 1.333%) and compared with untreated fillets (blank control). Fluorescence detection and thiobarbitoric acid index showed a lower oxidation development for both RP treatments than for both controls, especially in the case of the highest concentration (RP-2). The decrease in ghitathione peroxidase activity was found to be shower in the case of the RP-2 treatment. The sensory analysis showed an increased shelf-life according to the sequence blank control < water control < RP-1, RP-2.

    Slurry ice is a biphasic system consisting of small spherical ice crystals surrounded by seawater at subzero temperature. Its employment was evaluated in the present work as a new chilled storage method for whole horse mackerel (Trachurus Trachurus) and compared with traditional flake icing. Different chemical analyses (nucleotide degradation, lipid hydrolysis and oxidation, interaction compounds formation and electrophoretic protein profiles) related to quality loss were checked and compared to sensory evaluation. An inhibitory effect on quality loss mechanisms was observed for the slurry ice treatment, according to the assessment of the K value, free fatty acid content, thiobarbituric acid index, fluorescent compounds formation and sarcoplasmic protein profiles. The sensory analysis showed a higher shelf-life time for fish treated under slurry icing than for flake iced fish (15 and 5 days, respectively). Results confirm the practical advantages of using slurry ice as a chilling storage method. According to the inhibition of lipid hydrolysis and oxidation obtained, the employment of slurry ice on relatively fat fish species is recommended to obtain safer and higher quality fish products.

    Sensory and chemical analyses were performed during the chilled storage of whole and filleted horse mackerel ( Trachurus Trachurus ), an underutilized medium-fat fish species. For both kinds of fish products, satisfactory correlations with the storage time were obtained for amine formation (total volatile basenitrogen and trimethylamine-nitrogen), lipid damage (free fatty acid formation), and formation of interaction compounds (fluorescence detection in the aqueous phase). Sensory analyses showed a gradual lower grading with time, with a shelf life of 14 d for whole-fish samples and 12 d for fillet samples. Correlation and multivariate analyses between the sensory attributes and the chemical indices showed that trimethylamine-nitrogen detection was the most accurate chemical method for damage assessment during the chilled storage of whole and filleted horse mackerel.

    Abstract Forty-five different parasite taxa were recorded from 1919 Atlantic horse mackerel Trachurus Trachurus caught at 20 stations in a study area from off the coast of Morocco to south-west Norway, and throughout the Mediterranean Sea. Eleven taxa are new host records, and one is probably a new species. The geographical distribution and biology of each parasite and its value for the stock identification of T. Trachurus are described and discussed. The most effective biological tags were the larval nematodes Anisakis spp. and Hysterothylacium aduncum . The distinctive pattern of infection with these nematodes observed in samples from the single North Sea station clearly distinguishes this from all other stations and supports the current management strategy which treats the North Sea population as a separate stock. The distinction between the putative “western”, “southern” and “mauritanian” stocks is less clear, with evidence of considerable mixing between them. The highly localised distributions of some parasites in the Mediterranean part of the study area suggest that T. Trachurus populations there appear to comprise three main stocks—western, central and eastern. There is also strong evidence of the migration of fish from Atlantic populations into the extreme western part of the Mediterranean.

    In the present paper, recent results obtained on the use of different distributions observed in larval species of Anisakis, genetically identified by means of allozyme markers, for stock characterization of demersal (Merluccius merluccius), small (Trachurus Trachurus) and large pelagic (Xiphias gladius) finfish species in European waters, are reviewed and discussed. Several species of Anisakis were identified in the three fish hosts: A. simplex (s.s.), A. physeteris, A. typica, A. ziphidarum, A. pegreffii, A. brevispiculata and A. paggiae. Canonical discriminant analysis performed on all the samples of the three fish species collected in areas comprising their geographical range, according to the different species of Anisakis identified, showed distinct fish populations in European waters. In all the three fish hosts, the pattern of distribution of Anisakis larvae allowed discrimination of Mediterranean stocks from Atlantic stocks. In the case of swordfish, the possible existence of a southern Atlantic stock separated from a northern one is also suggested. Congruence and discordance with the population genetic data inferred from allozyme markers on the same samples of the three fish species are also discussed.

    There is a broad knowledge of the growth andreproduction of Trachurus Trachurus ,although important gaps still exist. Horsemackerel are a long-lived species, reaching upto 40 years of age. They have isometric growth,although the alometric parameter b mayvary throughout the year and in relation tolatitude. Growth to age 3 is rapid compared toslower growth later in life. Phenomena ofdensity dependent growth have been observed inthe northeast Atlantic. Horse mackerel are anasynchronous species. The following stages ofatresia have been validated in horse mackerel:alpha, beta, and delta. The transition infemales from the spawning state to postspawning is very fast. The spawning fraction inhorse mackerel is estimated to be between 8.3%and 20.9%. Horse mackerel have a long spawningseason (up to 8 months), which varies accordingto geography. Length at first maturity isbetween 16 and 25 cm, most commonly around21 cm. Males mature at a slightly smallerlength than females. The age at first maturityfor females has been estimated to range from 2to 4 years, depending on the geography. Batchfecundity has been estimated to range between172–209 oocytes per gram-female-weight. Femalespawning lasts between 65 and 94 days. Anindividual female can release from 5 to 16batches during the spawning period. Theestimated potential annual relative fecundityranges from 1040 to 3280 oocytes pergram-female-weight.

    SUMMARY: This paper describes the seasonal and geographical distribution of mackerel (Scomber scombrus, L.) and horse mackerel (Trachurus Trachurus, L.) in the northern coast of Spain (ICES Division VIIIc and Sub-division IXa North), based on commercial catches and bottom trawl surveys. Mean monthly commercial catches were mapped by ICES statistical rectangle, and the quarterly distribution by age group (0,1,2 and >2 years) and by Sub-division (Sub-division VIIIc East, VIIIc West and IXa North) are presented for the period 1989 to 1994 in the case of mackerel, and 1990 to 1994 for horse mackerel. Series of catch per unit effort by age are also analysed for some commercial fleets.The age group distribution (0,1,2 and >2 years) in autumn, based on information from bottom trawl surveys, is presented for the whole area studied.The data analysis reflects clear seasonality of mackerel in the northern coast of Spain. Nevertheless, in the case of horse mackerel in the same area, seasonality is not so evident. These results are discussed with respect to spawning and feeding migrations of these species in the Northeast Atlantic.

    Muestras de jurel, Trachurus Trachurus, y de caballa, Scomber scombrus, procedentes de las divisiones 8b, 8c y 9a del ICES se han examinado con el fin de observar los nivels de infestacion por larvas de Anisakis simplex, durante los anos 1992 y 1993 respectivamente. La prevalencia, la intensidad media y la abundancia han sido los terminos considerados. Los valores de estas medidas son dependientes de la edad y de la talla de los ejemplares estudiados, especialmente en el caso del jurel y en menor medida en la caballa. Esta especie presenta un nivel de infestacion menor que el jurel, sobre todo en los ejemplares de mayor edad y tamano. Se observan diferencias significativas entre zonas geograficas respecto a la abundacia en el jurel, siendo mayor en aguas de Galicia (8c oeste + 9a norte) que en la 8c este (Mar Cantabrico). Este resultado cuestiona en cierto grado la actual definicion de stocks de jurel. Los valores altos que se observan en la prevalencia respecto a la caballa de la Subdivision 9a norte, refuerza la idea de que Galicia es una zona en donde la poblacion de Anisakis simplex es abundante.
