    We demonstrate here, in a pilot-scale experiment, the feasibility of ethylenediaminetetraacetate (EDTA)based washing technology for soils contaminated with potentially toxic metals. Acid precipitation coupled to initial alkaline toxic metal removal and an electrochemical advanced oxidation process were used for average recovery of 76±2% of EDTA per batch and total recycle of water in a closed process loop.     Resumo: Este estudo objetivou o desenvolvimento de um processo de obtenção das proteínas do sangue de bovinos e a avaliação de suas propriedades funcionais e nutricionais, visando sua utilização em alimentação humana. Os estudos foram realizados com sangue oriundo de bovinos sadios, coletado no frigorífico Nova Odessa, Nova Odessa São Paulo, por punção direta no sistema arterial (arcus aortae). Foi utilizado citrato de sódio como anticoagulante e após a coleta o sangue foi centrifugado para separar a massa celular do plasma. O plasma foi concentrado por ultrafiltração e desidratado em "spray dryer" sendo obtido, dessa maneira, o concentrado protéico de plasma (CPP). A massa celular foi hemolisada e fez-se a desconjugação da hemoglobina em meio ácido, precipitando-se o grupamento heme com solução diluída de carboximetil celulose. A globina foi recuperada do sobrenadante por precipitação em pH 6,0 com HCI 1N, e desidratada por liofilização, obtendo-se o isolado protéico de globina (IPG). As frações desidratadas foram caracterizadas quimicamente através da determinação de composição centesimal, minerais e aminoácidos. A qualidade protéica do CPP, IPG e de misturas dos mesmos, foi avaliada in vivo através da determinação do quociente de eficiência líquida da proteína (NPR) e balanço nitrogenado. Foram avaliadas as propriedades funcionais das frações protéicas através da determinação da solubilidade, capacidade de absorção de água, capacidade de formação de espuma e estabilidade da espuma, capacidade de emulsificação e estabilidade de emulsão e geleificação, tendo sido verificada a influência de parâmetros como pH, concentração de proteína e força iônica do meio. O rendimento de recuperação da globina foi de 61,26% em relação à solução de hemoglobina e a porcentagem de remoção do feito de 96,9%. A composição de aminoácidos do CPP apresentou-se adequada em relação ao padrão teórico da FAO, porém, o IPG foi extremante deficiente em isoleucina e em aminoácidos sulfurados. A mistura CPP: IPG na proporção de 2: 1 quando comparada ao CPP, IPG e mistura CPP:IPG na proporção 1:1, apresentou maior valor de NPR (4,12) e digestibilidade verdadeira (95,03%), não diferindo significativamente (p:S; 0,05) da caseína. O CPP apresentou o maior balanço nitrogenado (1,13), valor biológico verdadeiro (85,46%), e quociente de utilização líquida verdadeiro da proteína (81,05%). O CPP apresentou-se altamente solúvel nos pHs de 2 a 9, enquanto que a mais alta solubilidade do IPG ocorreu em meio ácido e acima do pH 9. O CPP superou o IPG na capacidade de formação de espuma em pH 7, na capacidade de emulsificação acima de pH 6 e na capacidade de geleificação. O IPG apresentou maior capacidade de absorção de água, maior capacidade de formação de espuma em pH 4 e maior capacidade emulsificante nos pHs 3 e 4.Abstract:The objective of this thesis was to obtain bovine blood proteins and to study their functional and nutritional properties to be used in human foods.     BACKGROUND The cleaning operation of extra-virgin olive oil (EVOO), subsequent to its extraction, is generally performed by means of a vertical disc stack Centrifuge Separator causing qualitative damage due to increased oxidative alterations. However, previous works have demonstrated the great opportunity that settling represents in order to improve the EVOO quality performing the separation operation with minimal qualitative damage. RESULTS A new patented prototype device (ROTASED, RS) has been used in the cleaning operation of extra-virgin olive comparing physical and chemical characterization of EVOO after 48 h from extraction and after 180 days of shelf-life. In addition, the results have been compared with those obtained using an assisted sedimentation (AS) plant and an enhanced sedimentation plant by hydrocyclone (H) from previous authors' works, in order to assess the improvement of EVOO quality that could be attained with respect to the use of the vertical disc stack Centrifuge Separator. CONCLUSION The results show that after 48 h of storage the tested patented prototype device seems to be preferable, however, after 180 days of storage, the difference between H and RS device results similar in terms of improvement of the final olive oil quality. In addition, the method of principal component analysis can be used to evaluate the suitability of an olive cv. in terms of quality of extracted oil. © 2020 Society of Chemical Industry.

    Olive oil extraction is mainly carried out using continuous extraction by decanter Centrifuge with efficiency of approximately 80–90%. After centrifugal extraction, olive oil is generally cleaned using a vertical disc stack Centrifuge Separator, which is suspected of being the major cause of decreased final olive oil quality. Experiments were carried out at industrial scale to compare the olive oil properties after improved processes of sedimentation (Sedoil) or centrifugation (Cenoil) with respect to raw olive oil obtained at the decanter exit (Control). Peroxide, polyphenol, chlorophyll, carotenoid, turbidity and K232 average values were significantly different between Sedoil and Cenoil, which confirmed that the use of disc stack Centrifuges represents an important source of oxidative reactions. Analysis showed that storage time dramatically affects the oxidation level of the olive oil. All parameters used to monitor the oxidation level (i.e., free acidity, peroxide value and K232) increased after 180 d of storage, and the content of natural antioxidants and pigments decreased as expected. The residual presence of water during long-term storage represented the most important source of oxidation, and an effective cleaning operation is necessary to preserve oil quality during its storage life. The analyses performed using 1H and 13C NMR showed that Sedoil was more similar in composition to Control than to Cenoil. The use of sedimentation plant allows the employment of the disk stack Centrifuge to be reduced improving both energy saving and the quality of clean olive oil.
