Seven cases developed neurotrichinosis and 23 had cardiologic complications. No deaths were recorded. Two patients had a positive muscle biopsy showing living Trichinella larvae. One of them was typed as Trichinella spiralis. A case-control study showed that Horse Meat was the only Meat associated with illness (odds ratio = 80.7). The risk of illness increased with the amount of Horse Meat eaten and when it was consumed raw. The cases, which were spread out in five foci, bought Horse Meat from five butchers who had received parts of a single Horse carcass imported in November 1993 from Canada. The Trichinella International Screening Program, implemented since 1985 after two similar episodes involving a thousand cases, failed to detect the incriminated Horse carcass. This new Horse Meat-related outbreak led to modifications of the internationally recommended screening methods whereby the weight of Meat samples tested was increased.

CDR review, 1997Co-Authors: H Laurichesse, M Cambon, D Perre, T Ancelle, M Mora, B Hubert, J Beytout, M ReyAbstract:The investigation of a trichinosis outbreak in Auvergne, France identified 23 cases in 12 households living in two cities-Clermont-Ferrand and Montlucon-between 15 February and 7 March 1991. One patient required intensive care, 15 had major symptoms, and seven had minor or no symptoms. Two case control studies demonstrated a significant (p < 0.01) association between eating Horse Meat and acute trichinosis. Veterinary services found that three supermarkets where the patients had bought Horse Meat during the suspected period had been supplied by a single wholesaler. The analysis of the wholesaler's records revealed that the implicated Horse Meat had been imported from a slaughterhouse in the United States. This outbreak occurred despite a requirement in France for all Meat from Horses slaughtered in France and in countries exporting Meat to France to be examined systematically for trichinella.

Loop-Mediated Isothermal Amplification (LAMP) for the Detection of Horse Meat in Meat and Processed Meat Products

Farnleitner, Kurt BrunnerAbstract:In this study, a simple and rapid high-throughput method for the detection of Horse Meat in processed food products is described. Specific loop-mediated isothermal amplification (LAMP) primers were designed to target the mitochondrial genome of Horse ( Equus caballus ). No cross-reactions were observed for beef, pork, and chicken. Sensitivity tests showed reliable detection of 0.1 ng of extracted Horse DNA. Spiking experiments were performed to show that the assay is capable of detecting 0.1 % Horse Meat in prepared model sausages, independent from their cooking time. Additionally, five different commercial Horse Meat products were analyzed to ensure the robustness of the assay when applied to varying food matrices. All experiments were performed on a heating block followed by visual detection using an intercalating dye. Results were confirmed by real-time fluorescence monitoring using a thermal cycler and compared to a previously published real-time PCR assay. In conclusion, this method is a good candidate for the simple and efficient testing of Horse Meat in food-products in the future.

In the present study an assessment of the specificity and sensitivity of the LAMP Horse screening assay was made and outcomes were compared with the EURL-AP (European Union Reference laboratory for Animal Proteins in feeding stuffs) qPCR method. The specificity was tested with DNA samples from seven other species. The sensitivity of the LAMP assay was subsequently challenged with different percentages of Horse DNA in cattle DNA and different percentages of Horse Meat in cattle Meat. Both qPCR and LAMP were able to reliably detect Horse DNA or Meat below 0.1%, but LAMP was able to do so in less than 30 min. The DNA of other species did not result in a response in the LAMP Horse assay. These features show that the LAMP method is fast, specific, and sensitive. Next, 69 processed Meat samples were screened for the presence of Horse DNA. The results showed that the LAMP Horse assay, combined with a simple and fast on-site DNA extraction method, results in similar outcomes as the EURL-AP qPCR method and is thus a promising screening assay to be used outside the laboratory. Only samples that are screened on-site as suspect in the LAMP Horse assay, need to be brought to the laboratory for confirmation with the more laborious EURL-AP qPCR reference method.

Animal, 2017Co-Authors: Xabier Belaunzaran, Paz Lavin, Angel R Mantecon, John K G Kramer, Noelia AldaiAbstract:This study was undertaken to provide a thorough analysis of the neutral lipid (NL) and polar lipid (PL) fractions of Horse Meat that included the content and distribution of acyl and alkenyl moieties in foals under different rearing conditions. Two groups of crossbred Horses were studied; the first group was selected from suckling foals produced under grazing conditions and slaughtered at 4 months of age (n=8), and the second group was selected from concentrate-finished foals and slaughtered at 12 months of age (n=7). There were significant differences related to the age and feeding practices of foals which affected the intramuscular (IM) fat content and the fatty acid (FA) composition of NL and PL fractions. Samples from suckling foals were leaner and provided the highest content of methylation products from the plasmalogenic lipids, and total and n-3 polyunsaturated fatty acid (PUFA). By contrast, the Meat from concentrate-finished foals had a higher IM fat level resulting in a greater accumulation of 16:0 and total monounsaturated FAs in the NL fraction, whereas the muscle PL fraction retained a similar FA composition between both groups. Linolenic acid was preferentially deposited in the NL fraction, but linoleic acid and the long-chain n-3 and n-6 PUFAs were incorporated into the PL fraction where they served as cell membrane constituents and in eicosanoid formation.

Horse steaks (Longissimus thoracis et lumborum muscle; n=82) were purchased from butcher-shops and large grocery stores throughout six northern regions of Spain in two different seasons. Fat content differed significantly among regions (1.12 to 2.77%). Samples with higher intramuscular fat content presented the highest percentages of total monounsaturated fatty acids and the lowest contents of dimethylacetal and polyunsaturated fatty acids (PUFA), while the opposite was found in the leanest samples. A high variability was observed in the muscle and subcutaneous n-3 PUFA content. Overall, total n-3 PUFA content ranged between 1.17% and 18.9% in muscle fat and between 1.52% and 27.9% in backfat. Interestingly, almost 5% of surveyed loins from Horse carcasses (4 out of 82) contained over 300mg of linolenic acid per 100g of Meat which could have been marketed as a "source" of n-3 FAs according to Commission Regulation (EU) No 116/2010.

Horse Meat for human consumption current research and future opportunities

In this review, Horse-Meat production, trade and supply values have been summarized. In addition, the advantage of Horse production is noted because of its lower methane emissions and increased uptake, particularly of n-3 polyunsaturated fatty acids (PUFAs), which is based on its digestive physiology. Of particular interest in this review is the unique fatty acid composition of Horse-Meat with its high level of the nutritionally desirable PUFAs in both the adipose and muscle fat. Because of its large frame size and digestive physiology, the Horse can be considered an alternative to bovine Meat, with large advantages regarding the maintenance of less favored mountain grazing areas and its facility to transfer PUFA from feed to Meat.
