    Abstract:

    Foi utilizado o delineamento fatorial completo 23 para estudar o efeito das variaveis de processo no descascamento quimico de raizes do yacon, cultivadas na regiao metropolitana de Curitiba, estado do Parana. Foram realizados 11 experimentos, com tres repeticoes no ponto central, no qual foram avaliadas em tres niveis: concentracao da solucao de hidroxido de sodio, % (g/L) [6,10,14], temperatura da solucao de hidroxido de sodio, °C [70,80,90], e tempo de permanencia na solucao de hidroxido de sodio, minutos [2,4,6]. Todas as variaveis estudadas afetaram de forma significativa (p<0,05) o rendimento das raizes submetidas ao descascamento quimico. A variavel que mais afetou o rendimento foi o tempo de permanencia na solucao de hidroxido de sodio. O modelo ajustado para a variavel percentual de rendimento foi adequado, com R2 aj = 0,8497 e falta de ajuste nao significativa (p = 0,9312), podendo ser utilizado para fins preditivos. No ponto central foi obtido um rendimento satisfatorio (84% a 87%) e elevado percentual de casca removida (96% a 98%), indicando que o tratamento com 10% de solucao de hidroxido de sodio a temperatura de 80oC por 4 minutos pode ser empregado no descascamento quimico das raizes do yacon.

    Summary The research aimed at determining, using surface response methodology, an optimal chocolate cake formulation when wheat flour was partially replaced with inulin and/or yacon meal. The yacon meal used in the formulation was prepared by using tuberous roots of yacon (Polymnia sonchifolia Poepp. & Endl.). The optimization indicated that a formulation with 20% of the wheat flour replaced with yacon meal, 153 mL of water and no inulin showed the best values for hardness (3.638 N), cohesiveness (0.691) and specific volume (1.86 cm3 g−1). A formulation with 40% of the wheat flour replaced with yacon meal, 6% replaced with inulin and containing 126 mL of water showed similar values to the optimized formulation for the three responses mentioned earlier but, in addition, it had a greater content of fructooligosaccharides and inulin. Consequently, both formulations may give useful functional foods with physical parameters comparable with the control formulation.

    Abstract:

    The potential inhibitory effect of 54 Mexican Indian medicinal plants on the activation of transcription factor NF-kappaB was studied. Band-shift experiments identified the ethanolic leaf extracts of Artemisia ludoviciana ssp. mexicana, Calea zacatechichi, and Polymnia maculata (all rich in sesquiterpene lactones) as inhibitors of NF-kappaB down to a concentration of 25 microg/ml. The sesquiterpene lactones isohelenin and parthenolide prevented NF-kappaB activation completely as low as 5 microM. Treatment of HeLa cells with leaf extract of A. ludoviciana ssp. mexicana, isohelenin and parthenolide prevented the induction of transcription on the IL-6 promoter. These experiments identify the eudesmanolide and germacranolide type of sesquiterpene lactones as potent non-antioxidant inhibitors of NF-kappaB. All plants active in the NF-kappaB assay also showed a delay in the onset of capillary reactions of the allantois membrane in a physiological model for anti-inflammatory activity - the HET-CAM assay.
