Equations to predict weight and yield of beef pistol subprimal cuts were developed in this work using digital image analysis (VIA) of the 12th rib steak. Equations to predict total pistol subprimal cuts weight (CUTS) had coefficients of determination (CD) of 0.84, or 0.87 to 0.88, when the independent variables were the VIA parameters and the half Carcass weight (HC) or the total pistol weight (TP), respectively. The predicted values for the total seven subprimal cuts, as a percentage of half Carcass weight (CUTS%), presented CD values ranging from 0.37 to 0.47, or 0.21 to 0.31, using HC or TP as a principal independent variable. Likewise, the equation for weight of the individual subprimal cuts had CD values ranging from 0.40 to 0.72, or 0.43 to 0.74 using HC or TP, respectively. In this research, the developed VIA procedure has demonstrated good repeatability and accuracy to estimate the total pistol subprimal weights, and some individual subprimal weights.Por várias décadas, a avaliação de carcaça bovina em sistemas de tipificação ou em pesquisas tem dependido de escores subjetivos e medidas obtidas manualmente, mas ultimamente tem havido um crescente interesse por novas tecnologias capazes de aumentar a acurácia das estimativas. Este trabalho teve como objetivo desenvolver equações para a previsão de pesos e rendimentos de cortes bovinos, através da análise de imagem digital (VIA) de uma seção do contrafilé da 12ª costela. As equações de previsão do peso dos cortes do traseiro especial (CUTS) apresentaram coeficientes de determinação (CD) de 0,84 e de 0,87 – 0,88, quando as variáveis independentes usadas eram os parâmetros VIA e o peso da meia carcaça (HC) ou o peso total do traseiro especial (TP), respectivamente. supplementation of different level of corn silage with linseed meal on performance of black head ogaden sheep fed grass hay
Science Technology and Arts Research Journal, 2016Co-Authors: Yohannes Urgesa, Getachew Animu, Mohammed YusufAbstract:The experiment was conducted to evaluate the supplementation effect of different level corn silage (CS) with linseed meal (LSM) on performance of black head Ogaden sheep. Twenty five yearling male sheep with a mean initial BW of 14.85±0.31kg were assigned into five treatments in a randomized complete block design. Treatments were grass hay ad libitum + 60 g DM/day LSM alone (T 1 ) or supplemented with 100 (T 2 ), 200 (T 3 ), 300 (T 4 ) and 400 g DM/day CS (T 5 ). The experiment contains 90 days feeding and 7 days digestibility trials and Carcass Evaluation. CP (crude protein) content was 10.0, 8.6, and 30.4% and the NDF content was 76.8, 59.6 and 37.0% DM for grass hay, CS and LSM, respectively. Total DM intake was 575, 637, 695, 765 and 844 g/head/day and was in the order of T 5 > T 4 > T 3 > T 2 > T 1 at ( p <0.05). Total CP intake followed a similar trend to that of total DM intake. The apparent digestibility of CP 72.4% for T5 was greater ( p <0.05) as compared to T 1 and T 2 . ADG was 50, 65, 70, 80 and 80 g/day for T 1 , T 2 , T 3 , T 4 and T 5 , respectively. Among the corn silage supplemented group ADG was lower ( p <0.05) for T 2 than T 4 and T5. Hot Carcass weight for T 1 , T 2 , T 3 , T 4 and T 5 was 6.03, 7.00, 7.35, 7.97, 8.00 kg respectively and dressing percentage on slaughter BW basis was lower ( p <0.05) for T 1 as compared to T 3 , T 4 and T 5 . Marginal rate of return (MRR) was lowest for T 5 (3.64%) and highest for T 2 (22.32%). So considering capital, T 2 with the highest MRR would be recommended as being economical. However, if capital is not the limiting factor, T 4 would be selected since it fetches better net return and is good in inducing better biological performance of animals in terms of ADG and Carcass output. Journal of Food Processing and Technology, 2016Co-Authors: Sefa Salo, Mengistu Urge, Getachew AnimuAbstract:This study was conducted using 24 yearling intact male Hararghe highland sheep with initial body weight (BW) of 15.7 ± 2.3 kg (Mean ± SD), to determine effects of supplementing different forms of barley grain to natural pasture hay basal diet on feed intake, digestibility, average daily BW gain (ADG) and Carcass parameters. Animals were grouped into 6 blocks of 4 animals based on initial BW and were randomly assigned to the four treatments. Treatments were feeding hay ad libitum alone (T1) or supplemented with 300 g dry matter (DM) of raw barley (RB, T2), malted barley (MB, T3) or cracked barley (CB, T4). All animals received 50 g DM supplemental noug seed cake (NSC) and had a free access to water and mineral block. The experiment consisted 90 days of feeding and 7 days digestibility trials and Carcass Evaluation at the end. The crude protein (CP) content of hay, NSC, RB, MB and CB were 6.6, 35.7, 11.7, 12.5 and 11.6%, respectively. Hay DM intake was higher for T1 (523 g/day) than other treatments (360- 425 g/day). Total DM intake (573, 710, 723 and 775 g/day (SEM = 29.5)) and CP intake (52, 77, 77 and 83 g/day (SEM = 2.0) for T1, T2, T3 and T4, respectively) was lower for T1 than supplemented groups, with no difference (P > 0.05) among the supplemented treatments. Digestibility of CP (55.8, 71.1, 69.0 and 70.0% for T1, T2, T3 and T4, respectively (SEM = 1.93)) were higher (P < 0.05) in supplemented sheep than T1. ADG of 13, 73, 87 and 83 g/day for T1, T2, T3 and T4, respectively (SEM = 6.0), was also greater (P < 0.05) for the supplemented groups than T1. Barley supplementation resulted in a higher (P < 0.05) hot Carcass weight than T1 (6.0, 10.0, 10.7 and 10.5 kg for T1, T2, T3 and T4, respectively (SEM = 0.56). The results of this study highlighted that treatment of barley as in malting and cracking do not alter the performance of sheep as compared to the untreated barley. Thus, supplementation with raw barley is recommended. In general, supplementing animals with energy dense diet has proven to improve animal performance and profitability.

Comparisons between genotype and gender groups showed that steers from beef breeds had higher EUROP conformation scores than those from dairy breeds which corresponded to a higher SMY% of sirloin and fillet. Results suggested that the EUROP grid may underestimate the sirloin SMY% of Charolais heifers due to their higher muscle-to-bone ratio. Furthermore, the 141 Carcasses were used to assess the accuracy with which video image analysis (VIA) and visual classification in a commercial abattoir predicted the weight and SMY% of the sirloin and fillet. Both VIA and the visual Carcass classification systems resulted in similar accuracies for prediction of sirloin SMY% (R2=58%, RSD=0.35% for VIA and R2=57%, RSD=0.35% for visual classification) but fillet yield was poorly predicted by both VIA and visual classification systems. Including the weight of excess fat removed during sirloin fabrication as an additional covariate for sirloin SMY% prediction did not offer any substantial improvement in predictive ability. Inclusion of bone weight as an additional covariate did show some promise for improving the prediction accuracy of fillet SMY%. The fact that no statistically significant correlations between fillet yield and EUROP Carcass classification categories (assigned visually or by the VIA) could be identified after adjustment for genotype further justifies the need to consider alternative modes of Carcass Evaluation to better reflect the distribution of meat throughout the Carcass.

The meat industry, however, aims for accurately predicted saleable meat yield (SMY%) to which the EUROP Carcass classification shows highly variable correlations due in part to the variable distribution of fat throughout the Carcass as affected by breed, sex, diet, and the level of fat trimming. Video image analysis (VIA) technology is capable of improving the precision and accuracy of SMY% prediction even for specific Carcass joints and simultaneously mimics the visual assessment to comply with EU regulations on Carcass classification. This review summarises the development and use of VIA for Evaluation of beef Carcasses and discusses the advantages and shortfalls of the technology and its application.
