    Abstract:

    Diarrhe is a serious public health problem because the mortality rate due to diarrhea is still high, especially in Balita (Children under five age). Knowledge of Food Sanitation is used as a basis and efforts aimed at hygiene and Food safety in order not to cause toxicity and human disease, especially about the diarrhea . The aim of this study is to find out correlation between mothers knowledge about Food Sanitation with diarrhea case occurance of Balita in Klirong I Community Health Center work area. The type of the research is case control with retrospective approach. Population in this study were mothers who have children who ever had treatment Klirong I Community Health Center. The samples were taken by purposive sampling technique. There were 68 respondents used as the samples that devided as cases population (34 respondents of Balitas who suffered diarrhea) and control population (34 respondents of  Balitas who never suffered from diarrhea). The data were analysed by using chi square test. chi square test. showed that x test =7.074 > 5.991 from the x table. It means that there is a correlation betwen mother’s knowledge about Food Sanitation with diarrhea case occurance in Balita. Sanitation knowledge can influence the diarrhea occurance. Keywords.   • The Situation of Food Sanitation at Thammasat University, Rangsit Campus

    Abstract:

    The purpose of this research was to survey the situation of Food Sanitation at Thammasat University, Rangsit campus during August 20 - October 4 , 2005 among 78 Food shops. Physical surveillance was carried out with a Food Sanitation inspection standard form, Food and Water Sanitation Division, on 15 items for Food shop and 12 items for Food stall. Chemical surveillance was analyzed from contamination by organophosphate, borax, formalin, salicylic acid and sodium hydrosulfite with in the high risk Food samples. Biological surveillance was analyzed from coliforms contamination in cooked Food and soft drink samples, utensils and hands. The result of the physical surveillance of 61 Food shops and 17 Food stalls found that Food Sanitation inspection standard dropped over 50% thus the collection and removal of Food waste and wastewater, Clean and closed containers of Ice, which were a height of 60 cm above the floor and used with a long handle spoon. Food or any other Foodstuff must not be stored or kept in potable ice. Furthermore, Storage spoons, forks and chopsticks with handle up or laid down neatly in clean containers, which were at a height of 60 cm above the floor. (Food shops 81% , 79% , 63% and Food stall 53% , 57% , 50%). Additionally, Separation of chopping block between cooked meat, raw meat and vegetables or fruit (Food shop 73%). The result of chemical surveillance of 55 Food samples found only one sample of vegetable which contained organophosphate ( 2%). The result of the biological surveillance of 202 samples found coliforms contamination in cooked Food and soft drink samples 22% , and on hands 4.5% and utensils 3.5%. From this situation, it is evident that Food shop owners need to improve their Food Sanitation knowledge. Individuals that have to deal with Food Sanitation should solve and assign the quality of Food shop’s policy. They must also monitor and evaluate the Food frequently.

    Abstract:

    In 1994, 102 outbreaks of Food-borne disease involving 4,726 cases were reported to the Taiwan Department of Health. This is the highest number of outbreaks and cases in recent years in Taiwan. Of these outbreaks, 72.5% (74/102) were caused by bacterial pathogens, with Vibrio parahaemolyticus responsible for 56.7% (42/74), Staphylococcus aureus 20.3% (15/74), Bacillus cereus 14.9% (11/74) and Salmonella spp other than S. typhi and S. paratyphi 8.1% (6/74). V. parahaemolyticus has been a leading cause of problems in Taiwan for many years. Contamination of seaFood with this organism has been reported frequently, particularly in the warmer months. In 1994, small outbreaks (fewer than 5 cases) and large outbreaks (more than 50 cases) represented 31.4% (32/102) and 12.7% (13/102), respectively, of the total. The median outbreak size was 10 cases. A high proportion (54%, 7/13) of the large outbreaks was associated with commercial lunch-boxes supplied to elementary and junior high schools. Health education to improve Food Sanitation and supervision of Food Sanitation practices need to be strengthened.

  • Importance-satisfaction analysis of street Food Sanitation and choice factor in Korea and Taiwan

    Abstract:

    BACKGROUND/OBJECTIVES: The present study investigated Korean and Taiwan adults on the importance of and the satisfaction with street Food Sanitation and street Food choice factor, in order to present management and improvement measures for street Foods. SUBJECTS/METHODS: The present study conducted a survey on 400 randomly chosen adults (200 Korean, 200 Taiwanese). General characteristics, eating habits, street Food intake frequency, and preference by type of street Food of respondents were checked. Respondents’ importance and satisfaction of street Food hygiene and selection attributes were also measured. In order to test for the difference between groups, χ²-test and t-test were performed. ISA was also performed to analyze importance and satisfaction. RESULTS: Results showed that the importance of Sanitation was significantly higher than satisfaction on all items in both Korea and Taiwan, and the satisfaction with Sanitation was higher in Taiwan than in Korea. According to ISA results with street Food Sanitation, satisfaction was low while importance was high in both Korea and Taiwan. In terms of street Food choice factor, importance scores were significantly higher than satisfaction scores on all items. In addition, satisfaction scores on all items except ‘taste’ were significantly higher in Taiwan than in Korea. CONCLUSIONS: A manual on Sanitation management of street Foods should be developed to change the knowledge and attitude toward Sanitation by putting into practice a regularly conducted education. Considering the popularity of street Foods and its potential as a tourism resource to easily publicize our Food culture, thorough management measures should be prepared on Sanitation so that safe street Food culture should be created.
